✔ 1-1/2 Cups Almond Flour
✔ 1/2 Cup Coconut Flour
✔ 1 Tsp Xanthum Gum
✔ 1/4 Cup Warm Water
✔ 1 Tsp Sugar
✔ 1 Tsp Dry Active Yeast
✔ 1 Tsp Baking Powder
✔ Salt (to your taste)
✔ 2 Tbsp Honey
✔ 4 Large Eggs
✔ 5 Tbsp Butter
Directions: Pre-heat oven to 325F. Mix the yeast, water and sugar - let sit. Melt the butter in a small saucepan and whisk in the honey - allow to cool. Beat the eggs well and then mix in the butter/honey mixture. Mix the dry ingredients and then add the wet ingredients and yeast mixture - mixing well as you go. Dollop large spoonfuls of batter onto a lined baking sheet (makes 8) and keep 1" apart. This dough is a little sticky so it really is more of a drop biscuit but with a sweet tinge. Alternates: Add raisins or cinnamon during preparation.
Cooking: Bake about 18 minutes and check with a toothpick to make sure all of the dough has baked, then turn off the oven and let them sit for 3-5 minutes in the oven. Serve warm with butter, honey or just by itself and enjoy!
