Gluten Free Cheesy Ciabatta Bread with a Spicy Option

Ingredients:

  • 1 Pack of our Cassava Bread Mix
  • 4 Large Eggs (Room Temperature)
  • 1 Cup Fine Grated Cheese (4 Cheese Mexican is a great one to use)
  • 1/2 Cup Water (Room Temperature)
  • 3/8 Cup Olive Oil (or Avocado Oil)
  • 1 Tbsp Apple Cider Vinegar
  • 1 Tbsp Maple Syrup (or Honey)
  • Option - 1 Medium Jalapeno (Seeds and core removed) - Finely Sliced and Diced

Directions:

  • Mix the wet ingredients (except the cheese) well
  • Add the dry mix pack ingredients and mix well. Then add the cheese (reserve a little to spread across the top of the dough) and jalapeno - mix very well
  • Using a large spoon, place on a 10x15 baking pan with parchment paper. The dough should be spread in a large rectangle 6-7 inches wide by 10 inches. Don't smooth the surface - leave it a little rough but round the corners and even the sides. Sprinkle the rest of the cheese. Let rest for about 20 minutes.
  • Place in an oven pre-heated to 350F. Bake for 30-35 minutes checking with a toothpick starting at about 25 minutes to ensure it's ready.
  • Remove from the oven and place on a wire rack to cool without the parchment paper. It should now measure 8+ inches wide by 11 inches.
  • After cooling, you can slice across the loaf and length-wise to make 6-8 sandwiches or 3-4 paninis (you don't need a panini press). You'll slice lengthwise through the center to do this. OR serve as a side dish to your meal. It works well as a finger bread.
  • Store in a sealed container with a paper towel on the bottom for up to 4 days in the refrigerator. Heat or Toast to serve.
  • OPTION: If you want to bake the paninis separately, you can do it and don't need a press. Make the dough as above but place the dough on a 10x15 baking pan with parchment paper in 4 places in 2-1/4 inch x 6-1/2 inch shapes. Slightly round the corners and smooth the edges but leave the top a little rough. Place in a oven pre-heated to 350F. Bake for 25-30 minutes checking with a toothpick at about 20 minutes. Remove and let cool as above and slice longways - each one will be 3+ inches by 7+ inches. If you'd like a nice treat, slice open and place thinly sliced meat (ham and/or turkey) along with provolone cheese - leave open face and broil on high for a little over a minute (you need to check often) - when done, remove, close the halves and serve. Very filling and delicious.
